Broccolini with Sesame-Miso Sauce
Even with just a handful of ingredients—many of them likely already in your pantry—the flavor payout here is huge. A thick, nubby mixture of toasted and coarsely ground sesame seeds and umami-rich miso is the perfect flavor accent to skillet-cooked Broccolini; the sauce, tossed with the just-cooked vegetable, clings beautifully to the florets and bias-cut stalks. A shower of scallions finishes the dish and adds fresh, oniony bite.

Don’t use red miso or any type of miso that’s very dark and strong. Mellow, slightly sweet white miso is the best choice here. Also, be sure to use seasoned rice vinegar. It contains both salt and sugar, which balances the flavors in the dressing.

01In a 12-inch skillet over medium, toast the sesame seeds, stirring often, until lightly browned, 2 to 3 minutes. Cool completely, then grind in an electric spice grinder or with a mortar and pestle until fragrant and coarsely ground.
