Salmoriglio is a simple southern Italian marinade and sauce that marries extra-virgin olive oil, garlic, herbs and lemon. The combination is perfect for rich, meaty salmon. The ingredients do double duty, seasoning the fish before cooking, then creating the sauce that finishes the dish. We broil lemon halves alongside the salmon; this renders the fruit extra-juicy while tempering its acidity. Baby arugula or spinach makes a colorful bed for the fillets and pairs beautifully with the sauce.

Bold, flavorful Salmariglio!
Quick, easy, delicious, and healthy. Salmariglio goes with everything. I could eat it by the spoon. The salmon turned out well (and it didn't even stink up the house!) but the salmariglio is to die for! Will definitely be making more often!

Easy Weeknight Dinner
This was very simple and easy. It came together quickly and the flavors were more developed than I expected. I think I will add a few drops of honey to the dressing at the end or put a bit of honey on the cut lemons before broiling next time - but, I like sweet dressings.
