Broiled Lemon-Garlic Salmon with Arugula
Salmoriglio is a simple southern Italian marinade and sauce that marries extra-virgin olive oil, garlic, herbs and lemon. The combination is perfect for rich, meaty salmon. The ingredients do double duty, seasoning the fish before cooking, then creating the sauce that finishes the dish. We broil lemon halves alongside the salmon; this renders the fruit extra-juicy while tempering its acidity. Baby arugula or spinach makes a colorful bed for the fillets and pairs beautifully with the sauce.
