The rich, highly aromatic Kashmiri dish known as rogan josh typically is made with lamb. We use bone-in chicken thighs that have had their skin removed before cooking to prevent the sauce from becoming too greasy. Butter and warm spices flavor the dish, and yogurt stirred in at the end adds creaminess. We use cinnamon sticks, whole cardamom pods and cumin seeds instead of the ground form of these spices so the sauce is velvety and without any chalkiness. Serve with basmati rice or warm naan.




Don't use regular yogurt in place of the Greek yogurt. Its thinner consistency will make the sauce watery. We preferred the richness of whole-milk Greek yogurt, but low-fat will work, too. Don't use nonfat, which lacks flavor.

This worked beautifully. I had to substitute the cardamom pods for 1/2 teaspoon of ground cardamom as suggested and I did the same with the cinnamon, using 1/2 teaspoon of ground. I also did use regular yogurt instead of greek because that is what I had. It worked just fine. Cook what you have.

Delicious and better than the sum of its parts. Spices are amazing. The hardest part was getting the skin off of chicken thighs BUT it was worth it.

Made this with boneless skinless thighs, cut into pieces, because we dislike saucy chicken with bones. Perhaps we lost some flavor as a result, because this was just OK and kinda forgettable. We had it alongside this site's Aloo Gobi, which was stellar, so it's also possible it was just overshadowed.

I do not have cardamom pods. Can I substitute ground cardamom?

Hi James -

We chose whole cardamom pods and cinnamon sticks since whole spices hold up better in the pressure cooker. To substitute with ground cardamom we would probably recommend 1/2 teaspoon to ensure the flavor still comes through in the dish.
