Chicken Yakisoba
Yakisoba, a stir-fry of ramen noodles, vegetables and salty-sweet seasonings, is a Japanese mainstay. It’s such a popular dish that grocery stores sell yakisoba kits that include fresh noodles and seasoning packets, as well as instant versions requiring only boiling water and a couple minutes to prepare. This is an easy homemade version that uses dried non-instant ramen and adds chicken and cabbage to make a complete meal. A trio of pantry staples—soy sauce, ketchup and Worcestershire sauce—provide big, bold flavor that the noodles absorb during stir-frying.

01In a large pot, bring 3 quarts water to a boil. Add the ramen and cook, stirring occasionally, until tender. Drain in a colander and rinse under cold water, tossing, until cool, then drain again. In a medium bowl, whisk together soy sauce, ketchup and Worcestershire sauce; set aside.
