Try to purchase salmon fillets that are 1 to 1¼ inches thick so they cook in the time indicated. If your fillets are thinner or thicker, or if you prefer your salmon medium-rare or medium-well, reduce or increase the cooking time by a minute or so. To accompany the salmon, thin slices of fresh, crisp fennel and tender herbs are dressed in a miso-seasoned dressing.

Question about foil wrapped salmon filet
I’m making this for 8 so I am wondering if I can put the foil,packets on my gas grill on high heat Instead of cast iron pan? Thank you

I just made this for dinner. It was easy to make and very good. I got coho salmon 1 inch. I cooked it for 5 min then took it off for 5 min. When I opened it, it was still not cooked. I got the pan hot again and put it back for an additional 3-4 min. It came out great. I definitely going to make this salmon again.

If you have skin on are you searing the skin side?

Hi Jessica -

The salmon is marinated skin side up and then added to the foil skin side down. The foil-wrapped salmon is then added to the pan skin-side down.

I received a set of great marinades for Christmas so I use that as my marinade but love this cooking method! I find 6 minutes is the perfect cook time. I used the BBQ cut salmon from Trader Joe’s.

The salmon was fine (really good but nothing special). Although I did enjoy not having to clean a pan. But the fennel salad was the star of the meal. So delicious!
