Green Beans with Chipotle Chili and Peanuts
Inspired by the smoky, nutty notes of Mexican salsa macha, this green bean dish employs our sear-and-steam technique. We sear the beans in a hot skillet until charred, then add water and a tight-fitting lid, allowing them to steam through. The result is deep flavor from browning and a pleasing tender-crisp texture. Sesame seeds and peanuts add plenty of crunch, while chipotle chili in adobo and fresh lime juice contribute smokiness and bright, citrusy flavor.

01In a 12-inch skillet over medium, combine 2 tablespoons oil and the garlic. Cook, stirring, until the garlic begins to brown, about 1 minute. Add the peanuts and sesame seeds; cook, stirring, until the mixture is golden brown, about 1 minute. Transfer to a small bowl and set aside; wipe out the skillet.
