The nutty, salty-sweet flavor of the Japanese sesame mixture known as gomae pairs perfectly with the roasted notes of charred broccoli. To maximize flavorful browning, distribute the broccoli evenly in the skillet and pat down the pieces so they make contact with the pan's hot surface. You will need a 12-inch cast-iron skillet for this recipe.

Don’t cut the broccoli larger than specified or the pieces may not cook through in the time indicated in the recipe.

20 minutes

  • pounds broccoli, florets cut into 1-inch pieces, stems peeled, halved and sliced ½-inch thick

  • 2

tablespoons grapeseed or other neutral oil

I roast broccoli & carrots weekly seems like it would be easier to roast veggies & then dress with the sauce. Looking forward to making this recipe.
