Spaghetti aglio e olio is a three-ingredient Italian classic starring extra-virgin olive oil (olio), garlic (aglio) and, of course, spaghetti. This version adds shrimp, incorporating pops of briny-sweet flavor. Toasting thinly sliced garlic in olive oil both infuses the oil, later used for cooking the shrimp, and creates a crispy garnish. We boil the spaghetti until just shy of al dente in minimal water, yielding an extra-starchy liquid ideal for making a silky sauce; the pasta finishes cooking directly in the mix so the noodles absorb the seasonings. To finish, lemon zest, juice and parsley are tossed in, imbuing each bite with fresh, bright notes.

Simple and Delicious
The lemon gives it a nice fresh flavor, just the right amount of zing with the red pepper flakes. Be careful not to overcook the pasta. Easy to cook; a new family favorite.

So simple, so lovely
I LOVE how fresh and simple this is. It's the perfect quick pasta dish. Definitely bookmarking to make again. I was temped to add cheese to this, but, honestly I feel like you'd just be muddling the delicate depth of the dish. Love!

Better than scampi
Simpler, better flavor and better contrasts. The bits of fried garlic - they need to cook longer than the recipe says - add some welcome crunch. I do recommend deglazing the pan the shrimp cooks in with a small amount of white wine. And set the shrimp aside. Put on top of the pasta after it’s done to prevent the shrimp from overcooking.
