Polenta (Durotherm)
This simple polenta can be eaten as is or embellished with cheese, sauteed vegetables or fresh herbs. For a thinner polenta, whisk in hot water or broth a few tablespoons at a time until it reaches the desired consistency.

Don't uncover the Durotherm until you are ready to serve the polenta.

cups water or low-sodium chicken broth

cups coarse ground polenta
Directions

01In a Durotherm, combine all ingredients, cover, then bring to a simmer over medium and cook for 7 minutes, adjusting the heat to maintain a gentle simmer. Remove the lid and whisk the polenta thoroughly, about 30 seconds. Cover, then return to a simmer over low. Immediately remove from the heat and place on the heat-retaining base. Do not remove the lid.
