Pork Ragu (Durotherm)
Serve this rich, chunky sauce over a thick, chewy pasta such as orecchiette, penne or ziti and topped with grated Parmesan cheese or a dollop of ricotta. It also is terrific over soft polenta enriched with butter. For the best flavor, use fresh, not dried herbs.
