Refried Bean and Cheese Tostadas
Here’s a great way to throw together a quick dinner with lots of flavor and texture using just a handful of basic ingredients. We use the oven to crisp corn tortillas into tostadas, a technique that requires less oil than pan-frying and allows you to do multiples at a time. Either canned black beans or pinto beans work for making refried beans, so use whichever you have on hand. Tostadas love garnishes, so see the list below for simple ideas, but feel free to add whatever you like, from fried bacon broken into bits to scrambled eggs.

6-inch corn tortillas

tablespoons grapeseed or other neutral oil, divided
Directions

01Heat the oven to 400°F with a rack in the upper-middle position. Brush the tortillas on both sides with 1 tablespoon of the oil, then place them in a single layer on a rimmed baking sheet. Bake until golden brown and crisp, 8 to 10 minutes, flipping them once about halfway through. Let the tostadas cool on the baking sheet; leave the oven on.
