Shrimp and Feta Bake
This is an oven-baked version of garides saganaki, a classic Greek dish that combines sweet shrimp with tangy tomatoes and briny feta cheese. The tomato mixture spends about 45 minutes in the oven to soften the vegetables and concentrate their flavors before the shrimp—which are done in a flash—are stirred in. Serve directly from the baking dish, with plenty of warm, crusty bread to sop up all of the juices.

tablespoon plus 1 teaspoon extra-virgin olive oil, divided, plus more to serve

teaspoons dried oregano, divided
Directions

01Heat the oven to 425°F with a rack in the middle position. In a 9-by-13-inch baking dish, toss together the 1 tablespoon oil, 1 teaspoon oregano, the tomatoes, fennel, onion and ¼ teaspoon each salt and pepper. Distribute in an even layer, then cover with foil and bake for 15 minutes. Meanwhile, in a medium bowl, toss together the shrimp, the remaining 1 teaspoon oregano, the remaining 1 teaspoon oil and ½ teaspoon each salt and pepper; set aside.
