Stir-Fried Snap Peas with Scallions, Ginger and Mango Chutney
In this super-quick stir-fried side, we use spicy, fruity, savory-sweet mango chutney as an ingredient, not as a condiment. We combine it with other high-impact options, such as lime juice, fresh chilies, ginger and garlic, to kick up the flavor and complement the natural sweetness of fresh sugar snap peas.

01In a medium bowl, whisk together the chutney and lime juice. In a 12-inch nonstick skillet over medium-high, heat the oil until shimmering. Add the scallions, shallot, chili and ½ teaspoon salt; cook, stirring often, until softened, about 3 minutes.
