Thyme, Fennel and Orange Zest Spice Paste
Dried thyme along with coriander and licorice-like fennel in this spice rub evoke the flavors of Provence. We rub orange zest into the spices to release the oils and evenly distribute the citrus flavor. The inimitable taste and vibrant hue of saffron is a welcome addition, but even without it, this seasoning mix offers a well-balanced mix of savory, sweet and citrusy. It’s especially good on steamed or seared seafood, and is a delicious match for pork and lamb.
