Tomato-Rice Soup with Caramelized Onion

To deepen the flavor of this pantry staple soup, we caramelize an onion and simmer some of it into the soup; the rest is reserved for garnish. Though our preference is long-grain white rice (regular, jasmine or basmati), even starchy Arborio rice works. Long-grain brown rice is good, too, but be sure to increase the simmering time to 35 to 40 minutes. No matter what type of rice you use, be sure to rinse and drain it before adding it to the pot.

Quick comfort food on a budget
This recipe was fantastic! Took less than 10 minutes of labor and was very flavorful. I used zhoug instead of pesto because it's what I had. My adult daughter said it reminded her of Spaghettios, and she ate 2 bowls. We served it with baked frozen battered fish filets and fresh fruit, very satisfying. This is a keeper.

Comforting and easy to make
Perfect when you want soup but don’t want to go shopping for ingredients. Pantry staples made into a delicious meal. I added chicken for a heartier meal.
