This recipe was inspired by the grilled wahoo we learned to make in Barbados. To simplify prep, we narrowed the long list of herbs and aromatics used to season the fish to just scallions and fresh thyme. And instead of a pre-grill marinade, we keep the flavors clean and bright by finishing the fish with a vibrant sauce. Mahi mahi is a widely available stand-in for hard-to-find wahoo; you also can use grouper or snapper fillets. Rice and beans are excellent accompaniments.

Very quick to broil- so make sure everything else is ready before you put fish in oven. Topping makes it!

Mahi-mahi recipe…fantastic
I used this for mahi…it is a great, quick weekday meal. Skipping the marinade and using it as the sauce made it super easy. Grilled on a pan instead of using the oven; turned out perfect. For the marinade I added an habanero white balsamic vinegar and reduced lime and used olive oil with chili to add to the spice. Served with rice and avocado/tomato salad with light red wine vinaigrette with garlic and thyme. Becoming a go to recipe. Need to try it with rice and beans and plantains!

Delicious - I used snapper. The green salsa is fantastic, and the fresno pepper adds some nice color and another note to it. Highly recommend.
