Citrus-Cilantro Chicken Skewers

Cuban mojo inspired these tangy-sweet chicken skewers that are cooked under the broiler. A mixture of citrus zest and juice, cilantro, vinegar and garlic doubles as a quick marinade and sauce for serving on the side. Grapefruit or oranges work equally well here; when zesting the fruit make sure to remove only the colored peel, not the bitter white pith underneath. For easiest cleanup, line the baking sheet with foil before placing the skewers on top.

Really, really good.
Needed slightly more salt. Don't chop the cilantro too fine, nor too coarse; about the size of 4 peppercorns worked well.

Good flavors, tender chicken!
We really enjoyed the flavor and tenderness of the chicken. I used oranges, as that is what we had. I thought that the dressing was a bit runny and would have benefited from whisking in more oil to emulsify so that it would adhere better. I might also try OJ concentrate to keep the flavor, but thicken the mixture. Good recipe!

Made as directed with grapefruit. The kids loved them and the sauce was great over brown rice

Quick, tasty, yum...
This is truly a weeknight recipe, with ingredients I usually have on hand, and I appreciate the broiler as the cooking method. I did not line my baking sheet with tinfoil, and found clean up to still be quite easy. Also, use the collected juices from the pan for drizzling over the meat or onto rice or vegetables you may have cooked as sides.

Excellent
This was delicious. I marinated the chicken for about 15 mins and it came out very flavorful. I actually don't think you need the extra sauce unless you want to drizzle it on rice or veggies, etc.

Cooked these over the grill today and they were really good! The grapefruit/cilantro mix was delicious without being overpowering. I did marinate the chicken in the mix for an hour first and used unseasoned rice vinegar as I had no white wine vinegar. Another keeper from Julia and the Milk Street team. Thanks, folks!
