Charred Broccoli with Japanese-Style Toasted Sesame Sauce
The nutty, salty-sweet flavor of the Japanese sesame mixture known as gomae pairs perfectly with the roasted notes of charred broccoli. To maximize flavorful browning, distribute the broccoli evenly in the skillet and pat down the pieces so they make contact with the pan's hot surface. You will need a 12-inch cast-iron skillet for this recipe.

pounds broccoli, florets cut into 1-inch pieces, stems peeled, halved and sliced ½-inch thick

tablespoons grapeseed or other neutral oil

01In a large bowl, toss the broccoli with the oil and ½ teaspoon salt. Heat a cast-iron 12-inch skillet over high for 3 minutes, or until a drop of water evaporates in 1 to 2 seconds. Add the broccoli and use a wooden spoon to pat it in a snug, even layer; reserve the bowl.
