Honduran baleadas are like soft tacos filled with mashed beans; they make a great breakfast or light lunch. We used leftover Oaxacan refried black beans, along with cheese and diced avocado. Flour tortillas are traditional, but any variety works, including our recipe for coconut milk-flour tortillas.

01Heat the oven to 450°F with racks in the upper- and lower-middle positions. Line 2 rimmed baking sheets with kitchen parchment. Place the refried beans in a small microwave-safe bowl. Cover and microwave on high until hot, about 2 minutes. Stir in the cilantro and lime juice, then taste and season with salt and pepper.
