Mushroom-Pork Omelet
This rich, frittata-like omelet is delicious hot, but we also liked it at room temperature. The radish-cucumber pickle provides a bright contrast, as well as a pleasing crunch. Serve with steamed jasmine rice.

Don't use a conventional skillet. A nonstick coating is key, allowing the omelet to easily slide out of the pan. Also, make sure the skillet, including its handle, is oven-safe, as the omelet finishes cooking in the oven at 400°F.

tablespoon plus 1 teaspoon soy sauce, divided
Directions

01Heat the oven to 400°F with a rack in the upper-middle position. In a medium bowl, use your hands to mix together the pork, 1 tablespoon of the soy sauce, the fish sauce, sugar, ginger and ½ teaspoon white pepper. In a separate medium bowl, beat the eggs, chili-garlic sauce and remaining 1 teaspoon soy sauce.
